An olive oil from the Algarve!
We had been wanting to visit the magical place where Monterosa is made for a long time. Had it not been one of the house oils from day one.
What many people don't know is that this wonderful olive oil called Monterosa comes from the Algarve, more specifically from Moncarapacho.
It's of incredible quality and you can have several monovarieties to experiment with and combine with various dishes.
This visit was completely in line with our expectations - a beautiful olive grove and a meticulous process at the mill that was so well explained to us by António.
Previously they had an orange grove, but olive trees were planted and they stayed at home in the Algarve, a dry climate.
The olives are picked by hand and transported immediately to the mill. Each variety has its own picking time, which is respected.
The olives at the mill are ground with granite millstones, in a mechanical process that dates back to Roman times.
The oil is extracted, filtered, stored in stainless steel vats and bottled using modern technology.
An olive oil with passion, detail and rigor, undoubtedly one of the best in the country.
